It is struggle to put into words how good butterflied Harrisa leg of lamb tastes when cooked on the BBQ. It’s the perfect combination of our award winning Heatherfed lamb marinated in Harrisa paste which is a delicious type of chilli & herb based marinade which originates from Tunisia. The flavour of the lamb and the crust you get from cooking over an open flame works perfectly with the classic North African herbs and spices you get in the Harrisa paste creating a depth of flavour which is simply stunning.
To make it we debone and trim one of our award winning Heatherfed lamb legs and then butterfly cut it so that the leg is flat and will cook evenly on the BBQ. We then carefully cover it in our own special recipe Harrissa paste along with some additional herbs and spices.
It’ll take about 20 to 30 mins to cook on the BBQ and you’ll need to allow it to rest for 10mins. The dish is best served with a spiced couscous ( I recommend Jamie Oliver’s spiced couscous recipe in his first book which is very good), green salad and some minted yoghurt.
This is one of those dishes that people will be asking for the recipe and talking about for years after you have cooked it for them.
