Description
Mallard is the largest and most common of the wild ducks. It has less fat than a normal duck so needs to be cooked carefully but you are rewarded with and a more intense flavour. Each duck feeds approximately two people. Sourced from the beautiful Trough of Bowland hills and surrounding woodlands the season for Mallard starts on the 1st September through to the end of January. Our Mallard are oven ready.
