Meats that taste great on a barbecue

When the sun begins to shine and the weather hots up, there is nothing better than firing up the barbecue and inviting friends over for a meat–filled feast in the garden. There are few meats that cannot be marinated and tossed on the barbecue to make delicious outdoor dinners and snacks, but there are some meats which just work better on the barbecue. Here are a few of them:

Ribs

Whether you prefer pork or beef ribs, there is no doubt that you will find they taste better when they have been grilled on the barbecue. The smoky heat of the barbecue adds so much flavour to ribs which have been marinated overnight in barbecue sauce, but ribs must be cooked carefully if they are to be a big success at your barbecue.

Ribs are slow-burners and can take anywhere from 45 to 90 minutes to cook on the grill. If they are cooked too quickly, at too high a temperature, they can become tough, but it is well worth making the effort as sticky barbecued ribs are simply divine.

Pork chops

Pork chops braised with mashed potatoes and gravy is one thing, but throwing them on the barbecue creates a real taste sensation. Chops with bones are best for the barbecue, as the bone really adds to the flavour of the chop when grilled and the smokiness of the barbecue adds so much depth to the taste.

Chops should be soaked in a marinade before grilling and taste great with a range of sides, including apple salsa.

Sausages

Sausages are a classic barbecue food for a reason – they just taste better when they have been grilled. The smoke of the grill gives sausages extra flavour and brings out the natural smokiness of the herbs. Served with onions, ketchup, and mustard, they are hard to beat.

Sausages are great for the barbecue because, placed in roll, they are extremely portable and kids love them. Try it with some gourmet or chipolata sausages for a real treat.

Steak

Just about every cut of steak can be barbecued for that authentic flame-grilled flavour. Steak which has been marinated in soy sauce, chili, pepper, garlic, and sugar tastes amazing and is definitely one for the grown-ups to enjoy. Marbled steak is great for the barbecue, as the fat keeps the steak moist, juicy and flavourful.

Chicken

Chicken is not the first choice of many barbecue aficionados but, when it is treated right, chicken can really come alive. The smokiness of the barbecue gives the chicken a lot more flavour, and a range of marinades can be used to infuse flavour into the meat.

Cutting chicken into cubes, marinating it in jerk seasoning or satay sauce and adding it to skewers with the veggies of your choice, makes for delicious kebabs that are a great healthy option for any barbecue.
