Our lambs are reared in the beautiful Forest of Bowland as part of a hefted flock; roaming free and grazing high up on the fells . It is this combination of the rugged terrain and the gorse and heather that the animals feed on which gives the meat a delicious flavour. A regular now on gastro pub and Brasserie menus the lamb shank has grown in popularity over the last two decades. When slow cooked until the meat literally falls off the bone it is absolutely delicious and looks amazing.
