Description
Pork shoulder is one of the most flavoursome parts of the animal. It has a good layer of fat on the outside and internal marbling which makes it very forgiving to cook and stops it from drying out. It’s also very versatile and can make beautiful roast pork with crunchy crackling as well as a host of other dishes including slow cooked pulled pork which is so popular nowadays.
The rare breeds we use are Gloucester Old spot and Saddleback. All our pork is free range and we work with our farmers to ensure it has an ample layer of fat which gives it fantastic flavour and produces excellent crackling.
